Every Friday, the Visalia Times-Delta and Tulare Advance-Register publish, in print and online, reports of inspections at locations where food is prepared or sold. The inspections are performed by the Tulare County Department of Environmental Health Services. The score is based on a point system that rates 97-100 as excellent, 88-96 as good, 76-87 as poor. Below 76 is failing and usually requires, as noted, immediate correction of deficiencies or, in some cases, closure. Some violations are considered major, others minor. Comments listed are for major violations.

Observed other employee handling raw chicken and handling ready-to-eat salad without washing hands properly. Employees are required to wash hands when switching from working with raw to ready-to-eat foods, or anytime when contamination may occur. Observed cockroach on wall of service counter. Also observed live cockroach on service counter wall near health permit. Owner killed it with his hand. Owner was asked to wash hands properly before continued working. Provide pest-control receipts from past six months if possible. Strongly recommend pest control company to indicate where pest control is being provided throughout the facility and what traps are being placed. Observed holes where pipes enter wall under three-compartment sink. Seal to ensure vermin-proofing. Observed screen door for back entry with a 1-inch gap at bottom. Provide weather stripping to prevent vermin entry.

TORONTO: Loblaws store passes inspection, can reopen

The Loblaws store shut down for infestation earlier this week received the green light to reopen around noon today, city officials said.
"They have done a lot of good work," Jim Chan, manager of food safety for Toronto Public Health, said this afternoon.
The store spent the past few days repairing and cleaning the 650 Dupont St. location, including the drains, storage and garbage areas, he said.
This followed the discovery of large numbers of rats and mice/
."They've got really good compliance."
The company hasn't announced exactly when the store will be back in business, but said customers will be able to return products for a full refund at the service desk.
In a statement released this afternoon, Loblaw Companies Ltd., which owns the Loblaws chain, said its food safety team removed all at-risk products and implemented new pest-control procedures.
"We are currently in the process of restocking all fresh food in the store, taking an opportunity to retrain all store employees on processes and procedures, and preparing the store for reopening," the statement read.
An independent third party will inspect the store every 48 hours once it reopens, the company said.

The Victoria City-County Health Department and its sister organization, the Crossroads Public Health District, inspect places where food is served in Victoria, DeWitt, Jackson and Calhoun counties.
In the inspection reports, each violation in the Food Temperature/Time Requirements category is 5 demerits; in the Personnel/Handling/Source Requirements category, 4 demerits; and in the Facility and Equipment Requirements, 3 demerits. Zero is a perfect score while 100 demerits is the worst possible score.

During the production of Kitchen Crimes, a television series that dealt with food safety in the home as opposed to restaurants, there were a number of reoccurring themes that kept popping up. So I developed my top 10 list of Kitchen Crimes to reflect my observations from the television show.
Tops was a severe lack of handwashing or inadequate handwashing. Handwashing typically involved a quick 2 second rinse with water and drying with a dirty tea towel. Family members would pet their dogs, cats, and even in one case a pet turtle, then go and prepare food without handwashing. So, number one on my list is:
1. Wash hands thoroughly before and after preparing food. Lather with soap and water for at least 15 seconds. Rinse well and dry with a clean towel.
A number of families were aware that their refrigerator should be kept at 4-5°C, but it was never checked. Families were questioned on why they should maintain this temperature and the typical answer was that it would kill bacteria. The “danger zone” (4°C- 60°C) is conducive to rapid bacterial multiplication and at 4°C, bacterial multiplication is reduced, not stopped.
2. Invest in a fridge thermometer to ensure your fridge is at the right temperature. Cold foods should be kept below 4°C. Hot foods should be at a temperature greater than 60°C.
Throughout the filming of the series, families did not use thermometers to ensure food was properly cooked. Visual inspection seemed to suffice.
3. Invest in a digital, tip-sensitive thermometer to ensure food is properly cooked.
It always bugs me when I see open packages of meat dripping bacterial laden juices on ready to eat foods, like vegetables or fruit.
4. In your refrigerator, meats should always be placed on the bottom shelves or in meat drawers in case of leakage and vegetables should be kept above to prevent cross contamination. All open or partially consumed foods should be packaged in airtight plastic storage containers.
In one episode, I dressed up in some sort of a space suit equipped with facial gear and so on (more for effect than anything else), but it was to prove a point. Mice like to eat food so if food is left on the floor, uncovered, mice will be there.
5. All dry goods need to be stored off the floor and sealed properly to prevent entry of rodents or insects.
To ensure food is adequately cooled in the fridge,
6. Do not over-pack the refrigerator or freezer. This restricts proper air flow and prevents the appliances from functioning efficiently.
This next one always gives me a headache, happens very frequently in restaurants. Vegetables and fruit typically do not undergo a subsequent cooking process which leads me to number
7 on my list: Prevent cross-contamination when preparing food by designating one cutting board for raw meats and another for vegetables or any ready-to-eat foods.
8. When cleaning surfaces, wash first with soap and water then sanitize with a mild solution of chlorine bleach and water.
If one is looking for the highest bacterial counts in the household, look no further.
9. Replace dishcloths and sponges on a daily basis.
10. After dishwashing, all utensils and dishware should be air dried to prevent cross-contamination from towels.

# Ross County Head Start/Ohio University-Chillicothe (Jan. 7) - Observed raw beef stored above ready-to-eat food in reach cooler and opened packages of lunchmeat without datemarks. Sanitizer for spray bottles in a high concentration greater than 200 ppm chlorine. Head Start was ordered, to prevent cross contamination, to store all raw meat, poultry and fish below or separate from ready-to-eat food. The manager of the delivery company had just delivered the beef and placed it on the top shelf. Ensure raw food is stored properly upon delivery. Violation corrected during the inspection. Date all ready-to-eat food upon opening or preparation so food can be used within seven days of opening to limit growth of microorganisms. Use chlorine sanitizer in a concentration of 50 to 100 ppm to help prevent possible chemical contamination of food contact surface. Violation corrected during inspection. Cold and hot food sampled at proper temperature. Kitchen equipment kept very clean to sight and touch. Sanitizer for the dish machine observed in proper concentration 50 ppm chlorine. Hot water for ware washing hotter than 110 degrees.
# Peking Restaurant, 32 W. Main St. (Jan. 6) - Observed food uncovered in Dr. Pepper upright and walk-in coolers. Observed several food items stored in cardboard boxes. Observed food debris build-up on the inside of the microwave oven. Observed debris build-up on the can-opener blade. Hot water in the handwash sink was not reaching 100 degrees. # American Legion Post 62, 32 W. Main St. (Jan. 6) - Raw meat was stored above ready-to-eat food in walk-in cooler. Leftover chicken and noodles in the reach cooler were at 48 degrees - in the temperature danger zone. The noodles were cooled the day before and appear to have exceeded the six-hour minimum cooling time and temperature control. Opened ready-to-eat food, such as ham salad, did not have date marks. Several 5-pound containers of potato salad, macaroni salad and cole slaw had expired use-by dates. Many leftovers were stored in single-use containers. Use thin shallow pans or small containers and keep food uncovered while cooling to rapidly cool food. Food was discarded. Date all ready-to eat food upon opening to ensure it is used within seven days of opening. Expired food was discarded upon inspection. Do not re use single-use containers to store food. Use durable food-safe containers. Entire floor must be cleaned. Cold and hot foods were at proper temperatures. Sanitizers were in proper concentration. Food prep area clean to sight and touch.
# YSK Corp., 1 Colomet Drive (Jan. 7)- The floor had an accumulation of grease and residue underneath equipment, along walls and coving and in hard-to-reach areas. Ordered to ensure floors are cleaned of grease and residue in hard-to-reach areas routinely. Cold and hot food sampled at proper temperature. Upon inspection, hot food sampled appeared to be at proper temperature, except a few items, such as fried fish, grilled cheese and fried potatoes, were between 120 degrees and 135 degrees. Restaurant was ordered not to overfill those items on the buffet. Food-prep areas, dish area, equipment and buffet appeared to be kept clean to sight and touch.
# Kingston Marathon, 10238 Ohio 159, Kingston (Jan. 7 follow-up inspection)- The pizza operation is closed temporarily for remodeling.
# Jerry's Inn, 319 S. Paint St. (Jan. 7) - Debris build-up was observed on the tops of the doors of the upright cooler. Floor tiles were missing in the lower kitchen area. Paint was chipping on the walls of the lower kitchen area. Inspector observed debris build-up on the inside of the ice machine, residential-style refrigerators used in the facility, no handwash signs above the handwash sinks and no covered trash can in the woman's restroom. Restaurant was ordered to clean equipment at a frequency to prevent debris build-up. Floor tiles must be replaced and wall must be sealed or repainted. The ice machine must be cleaned often enough to prevent debris build-up. Residential-style refrigerators must be replaced with approved commercial-grade equipment. Handwash signs must be posted above all handwash sinks. A covered trash can must be provided in the women's restroom. Cold-holding temperatures appeared to be cooler than 41 degrees. Hot-holding temperatures appeared to be hotter than 135 degrees. Sanitizer for wiping cloths appeared to be at the proper concentration.

QATAR: Eateries warned to ensure food safety

The Public Health Affairs Department at the Ministry of Municipal Affairs and Urban Planning has warned restaurants and eateries as well as hotels to abide by food safety rules as failure to comply could cost them dear.
Assistant director of the department Mohamed Ladhan al-Kaabi told Gulf Times that the department strove to ensure food safety in all dining outlets across Qatar.
“Last year, around eight food outlets were closed due to certain irregularies and some of them were big names. Just recently another big outlet was shut down due to poor hygiene that posed a risk to people’s health. We are very strict on this,” he said.
Al-Kaabi said that first-time offenders would face a one-month closure while a second violation would invite a two-month shutdown. Any further offence would be referred to the police department for prosecution, which could lead to court cases and fines running into hundreds of thousands of riyals.
He said the department, alongside the Ministry of Public Health, oversaw the import of all food products and also checked the quality of food items in restaurants, supermarkets, slaughter houses and fish markets.
The department also had the authority to inspect factories making dairy products and processed foods, he said.
“One of the conditions set by the ministry is that people processing food must have health certificates showing that they are free from infectious diseases,” he added, emphasising that employers should ensure that attendants at eateries had the certificates.
He said the department also routinely checked hair salons and provided them with a follow-up register to be filled by customers.
“Last December, we issued certificates to some women’s hair salons after finding their record excellent.”

UK: Rats rampage at restaurant

Rat droppings, a cricket bat used to stir curry sauce which was later gnawed by rats, and various holes used by the pests were found at a Chinese restaurant in Knighton.
Inspectors found evidence of rat activity at the Mandarin House Take-away at 50 Market Street when they carried out routine checks on March 5 last year.
At Brecon Combined Court last Friday, Chun-Hung Cheung was fined a total of £2,000 and ordered to pay £500 costs and a £15 victim surcharge after admitting five charges under the Food Hygiene (Wales) Regulations 2006.
Chairman of the magistrates Paul Bevan said: “You have admitted five offences resulting from a serious lack of hygiene at your premises. These offences are serious and the possible consequences for your customers are terrible to contemplate.”
Cheung, 59, admitted failing to keep the premises clean, failing to maintain the premises in good repair, failing to keep food contact or preparation equipment in good repair, failing to put in place adequate procedures to control pests and failing to put in place, implement and maintain food safety management procedures.
Prosecuting for Powys County Council, Nigel Vaughan said that on March 5, 2008, the council’s environmental health officers visited Mandarin House to carry out a routine food hygiene inspection.
During the inspection, officers found rat activity within the premises with rat droppings noted in the food storage rooms and in the kitchen. A stainless steel saucepan was found to have rat droppings in it, there was evidence of gnawing at floor coverings and holes in the walls, and a brick, a saucepan lid and flattened tins cans had been placed against the holes to stop pests gaining entry.
Evidence of gnawing was also observed on items found at the premises including a wooden cricket bat which had previously been used to stir large vats of curry and then had been left for the rats to gnaw.

MARYLAND: City health department recognizing healthy, clean restaurants

Forget "clean crabs."
Health officials scrapped a plan to honor Baltimore's cleanest restaurants with a decal of the Maryland crustacean for a Clean Crab Award.
Instead, a prize ribbon decal will recognize those with a solid record of sanitation for the Charm City Health Award for Excellence in Sanitation.
"[The crab] is a bottom-feeder, so it's probably not a good image," said Olivia Farrow, assistant commissioner of the environmental health division of the Baltimore City Health Department.
Health officials announced the revamped award last week after a public comment period during which residents and the Restaurant Association of Maryland rejected the Clean Crab Award idea.
Restaurants must have passed all food inspections in the previous year with no pest infestation violations or critical violations, such as failing to have proper refrigeration or ensuring all food workers wash their hands.

The staff at the St. Joseph-Buchanan County Health Department must be doing something right when it comes to food-safety inspections.
The News-Press recently reviewed thousands of records related to the inspections that are carried out daily in St. Joseph (“How safe is that restaurant food?” Jan. 4 and online at stjoenews.net). In preparing his story, reporter Ahmad Safi also talked to restaurant and bar owners, and to the inspectors. In short, here’s what he found:
Serious violations of the health ordinances.
These included failure to keep foods either hot enough (above 140 degrees) or cold enough (below 41 degrees) to prevent harmful bacterial growth; “slime” or mold in unclean ice machines; dirty meat slicers where bacteria can grow and spread; and open personal beverages in the kitchen, which can allow the spread of bacteria from the employee’s mouth to hand, which may then get into the food.
Restaurants almost always owned up to a problem.
The owners and managers in most instances acknowledged the inspectors had a point — the kitchen staff had become careless or lax, the refrigeration equipment had become unreliable and needed repair, or staffing problems had allowed some things to slip by management.
The inspections are vital to the public health.
We heard some complaints about the inspectors — the suggestion they need to be more willing to work with financially strapped restaurant owners, the notion they at times might appear to have it in for a particular restaurant. None of that seemed to hold up as valid criticism when the public’s health is at stake.
Our expectation for the inspectors is they always conduct themselves in the most professional manner possible, knowing their decisions affect not only public health, but hundreds of small business owners. When in doubt, hold everyone to an achievable standard that ensures public safety.
And we would encourage our restaurants to make every effort to follow the rules. It’s disappointing that few take advantage of free food safety classes that the Health Department makes available to restaurant staffs.

# Taylor's IGA (Jan. 5 follow-up) -Chipped paint and floor sealant in the deli/meat department must be repaired. Price tags were observed covering expiration dates on baby food jars. The health department ordered price tags may not cover expiration dates. All other violations had been corrected since the previous inspection.
# Steak N' Shake (Dec. 30) - Hard-to-reach areas of floor and wall behind the ice machine, dish machine, dry storage room and soup kettle area were dirty with debris. Steak n' Shake was ordered to clean hard-to-reach areas routinely to prevent debris build-up. The sanitarian found cold and hot foods at the proper temperatures and the kitchen area was clean and orderly.
# McDonald's 1067 N. Bridge St. (Dec. 29)-Hard-to-reach areas had slight accumulation of food and debris. McDonald's was ordered to routinely clean these areas. The ammonia sanitizer for a utensil bucket was found to be in a high concentration. The sanitarian found cold and hot foods at the proper temperatures, and the kitchen appeared clean.
# Mac's Pizza, Bainbridge (Dec. 22 follow-up) -Floor was still in disrepair, no hot water was available at handwashing sinks, and the sanitarian noted a debris build-up around the dough machine. The sanitarian asked the floor be repaired or replaced to make it smooth and easy to clean. Mac's Pizza also was ordered to provide warm water for the handwash sinks and to clean the area around the dough machine routinely. All previous violations found Dec. 19 had been repaired.
# IHOP (Jan. 5) -Debris build-up on the ice machine and inside of microwave were noted and corrected at the time of inspection. Food items left uncovered in walk-in cooler were immediately covered during inspection, and a freezer with debris build-up also was cleaned during the inspection. Hot and cold foods were at the proper temperatures.
# Hopetown Market-Last Stop Bar (Dec. 29)-Hot water in three-compartment sink did not reach minimum 110 degree temperature. The insides of cooling units, cooler and freezer doors, walk-in cooler walls and floor, fryer prep table and slicer were dirty to sight and touch. The floor underneath equipment was dirty to sight and touch. Repair to the water heater was ordered; an employee said it had been under repair. Hopetown Market was ordered to keep all equipment and food prep surfaces clean to prevent contamination of food and to keep floor clean.
# Dock at Water (Dec. 29 follow- up) -Repairs were ordered to the cooler door gaskets, walk-in freezer and soup kettle shelf. Men's restroom walls and floor were observed as dirty. Kitchen ceiling tiles also appeared dirty to the inspector. New cutting boards had been purchased and food was kept covered in storage as ordered in the previous inspection.
# Subway at Walmart (Jan. 5) -The inside of microwaves, beverage nozzles, door handles to ovens and cooling unites were dirty. The counter underneath the microwave ovens was dirty with debris. The floor and walls underneath and behind the bread oven also appeared dirty with food and debris. Food sampled was at the proper temperature, and food prep areas, sinks and walk-in units were kept clean.
# Stardust Tavern (Jan. 5)-Missing and chipped ceiling tiles, debris buildup on the door seal of the upright cooler and shelf above dough machine. The microwave oven was in poor repair, and the sanitarian ordered it replaced. The sanitarian also ordered missing ceiling tiles be replaced and door seal and shelf cleaned periodically.
# Lighthouse Youth Center, Bainbridge (Jan. 6)-Bags of garbage were stored in front of the entrance door to the dining hall. Hot water in the handwash sink was not warm enough. Sliced onions were not date marked, and debris build-up was found on the inside of the ice machine. The center was ordered to store garbage in receptacles or waste handling units. The center also was ordered to fix the hot water, date mark sliced produce and discard after seven days and clean the ice machine periodically.
# Gables (Jan. 5)- A 30 inspection was conducted, and no violations were noted.

The sanitarian also ordered hard-to-reach areas in the kitchen and bathroom be kept clean.
# Bainbridge Shell (Jan. 6)- There were no handwash signs above the deli and handwashing sinks. Sliced produce had been stored longer than seven days. A build-up on the inside of the ice machine and residential-style freezer in the storage area. Pizza and smoked sausage were hot-holding cooler than 135 degrees. Corrections were ordered, and a re-inspection has been scheduled for Jan. 13
# American Legion Post 757 -A grease build up on the filters above the deep fryers was noted by a sanitarian. An outdated container of sour cream was found in use, and once-emptied single-use containers were reused for food storage. The sanitarian noted the sour cream was discarded during the inspection, and workers were told single use containers must be discarded after use. Residential-style freezers were used in the facility. The health department ordered they be removed and replaced with commercial units.

A McDonald's restaurant has apologised to a mother whose son found maggots crawling through his Big Mac - and given her $135 of vouchers for more burgers.
Northland health authorities are investigating a complaint from Lianne Tansley about the burger sold at Whangarei's Bank St restaurant.
Her 15-year-old son Isaac has vowed to never eat McDonald's again - but the fastfood giant says its food safety procedures are stringent and it is keen to investigate what happened.
Isaac ordered a Big Mac and cheeseburger from the drive-through on New Year's Day. He finished the cheeseburger but didn't start eating the Big Mac until he and his mother were nearly at their Whangarei Heads home.
"He took the top bun off to take out the gherkin, and then he said, 'My God, Mum, look at this'," said Lianne Tansley. "The whole patty was moving as if it was alive. It was gross." When she rang McDonald's a manager took her name and contact details and asked her to bring the burger back in to be replaced. "I said, 'No thanks, I'm never eating there again'."
Nine days later, after Tansley sent a photograph of the burger to the Northland District Health Board and the Northern Advocate newspaper, McDonald's regional operations manager Sanjay Kumar rang her.
He apologised for the delay and said the matter hadn't been brought to his attention, she said.
Kumar told the Herald on Sunday he visited Tansley on Friday and offered the vouchers as an apology.
The complaint had not been followed up promptly because Tansley didn't return the Big Mac to be checked, Kumar said.
"We thought the matter had been dropped. Otherwise we thought it could have been a hoax."
McDonald's national communications manager Kate Porter said it was unlikely maggots could have hatched in the beef patties, which were cooked from frozen when orders were placed.
Strict hygiene rules were in place at McDonald's and the chain took complaints seriously.

The Pima County health department is also back in action after the holidays, checking on food safety. Here's how the restaurants did this week.
Buck & Lil BBQ on East Grant road was hit with two critical and two non-critical violations.
According to the report, ranch dressing in small containers and a restaurant pan was not held at the mandatory 41 degrees or cooler temperature.
Also recently-cooked baked potatoes were cooling in plastic bags in the walk-in cooler, but the inspector required faster cooling. The report states, "proper cooling of baked potatoes is critical due to the possibility of botulism poisoning."
Buck & Lil BBQ gets a G for good.
Just up the road at Taquito Mio - two critical and five non-critical violations.
The report states, "Guacamole and steak were not held at the proper cooling temperatures [...] rice and beans stored in the walk-in cooler had no use-by dates."
A few quick fixes, no soap available in the hand-sink, the grill and stove had a moderate amount of accumulated grease and chips in bags were stored on floor mats in storage area when the inspector says they should be on food racks.
Taquito Mio gets a G for good.
Among the best this holiday season - Burger king on East 22nd street, Quizno's subs on East Grant road and wingstop on North Campbell Avenue all received an E for excellent.

PENNSYLVANIA: Health Department head says restaurant inspections OK

The head of Allegheny County's Health Department said that restaurant inspection has been up to par.
Dr. Bruce Dixon testified before County Council's Health and Human Services Committee Wednesday, responding to a recent article in the Pittsburgh Post-Gazette detailing shortcomings in restaurant inspection.
He said most restaurants are inspected yearly, as required by the county, and though inspectors frequently find violations, those are often minor and unavoidable.
Of about 3,200 full-service restaurants in the county, about 2,900 were inspected in 2008, Dr. Dixon said. He said he felt the 17 inspectors employed by the Health Department was an adequate number.

For the first time, the public can view inspection reports online for 3,200 restaurants and workplace and school cafeterias in Snohomish County.
The change comes in part from ongoing requests from the public to view the results of regular inspections conducted by Snohomish Health District employees.
"We've had some frustrated callers during the last year; I'm glad it's here," said Rick Zahalka, a food and living manager for the public health agency.
The inspections are aimed at preventing the spread of food-borne disease outbreaks through steps such as ensuring that food is properly cooked and cooled.
The public health agency has been working for the last year to convert the reports from paper forms to computerized records, Zahalka said. Now, the inspection reports can be can be downloaded daily and posted online.
Zahalka said he expects the online reports to be popular with the public. And restaurants will know that the public can check up on them online.
"The public will become more aware of what constitutes a violation," he said. "Hopefully, they'll expect more from food establishments and get it."
Reports for most, but not quite all of the restaurants and school and workplace cafeterias are now available, he said.
However, the public should not base opinions of a restaurant's compliance with health standards on a single report, Zahalka said. "A series of inspections will tell a better story," he said.
Inspection reports are divided into "red" for high-risk violations and "blue" for low-risk violations.
High-risk violations are those which can most quickly cause food-borne illnesses. For example, improperly cooked hamburger can lead to the spread of the E. coli outbreaks which can sicken and, in severe cases, even kill people.
Occasional inspections with several "red" violations "does not mean the restaurant is out of control and unsafe," Zahalka said.
When violations are found, inspectors work to see the problem is corrected on the spot, if possible, he said.
The online reports list the name and address of the restaurant, the date of the inspection, how many violations were found, and a brief explanation of the problem.
Switching to computerized record keeping cost about $30,000, plus an ongoing monthly cost of $1,250, he said.

Nearly a thousand people each day eat food from the cleanest kitchen in St. Joseph. Health inspectors consider the food served at Heartland Regional Medical Center to be the best in town. To be served to sick people, it has to be.
Though Heartland, and a handful of other mostly chain restaurants in St. Joseph, have consistently done well during surprise kitchen inspections in the past three years, that’s hardly the norm.
A News-Press review of thousands of health documents for more than 150 restaurants and bars and grills in St. Joseph has found serious violations, such as prescription drugs being seized from a Mexican restaurant, roaches and houseflies living in a kitchen refrigerator at a Chinese buffet, and inspectors being forced to denature discarded foods with bleach so the restaurateurs don’t reuse the food.
At any time, anyone who sells food in St. Joseph can get an unannounced inspection from the St. Joseph-Buchanan County Health Department. Most restaurants, delis and carry-outs are inspected three times per year.
There are just more than 300 establishments in St. Joseph, including school cafeterias, bars and assisted-living facilities.
An inspector’s bad review can shut down an establishment. But that depends on how many so-called “critical violations” are amassed during the inspection.
There are nearly 300 ways a food establishment can get in trouble with the Health Department, and about 125 of those are considered critical violations.
“(But) really, it could be as few as one. If you have an infestation of any type of pest — mice, rats, roaches, flies even — you’re going to get closed,” said Rick Messa, one of the city’s two health inspectors.
A News-Press review of food safety records found four common critical violations: slime in the ice machine, an employee leaving an open personal drink in the kitchen, a dirty slicer and temperature violations — food not holding cold or hot enough.
Mr. Messa said each violation carries a real risk for food-borne illness.
